Last week I wrote part 1 about where I get my nutrients as a vegan. I loved writing it and it was received very wel. Even though I’m not a certified nutritionist or dietician, I love to do my research and share my findings with you. And that’s what’s these posts are: me sharing my findings. Since I’ve already covered vitamin b12, vitamin d and calcium, I thought I’d cover other important nutrients today. Iron, omega 3, protein and zinc are nutrients that you find in animal products a lot, but you can find them in non-animal products as well.

When I first came to this lifestyle, I was afraid I wouldn’t be able to get all my nutrients. I mean, we’ve been told all our lives animal products are the main source for calcium, protein and vitamin B12. Luckily, I did my research before going vegan so I knew what I had to eat and take to be sure to get all my nutrients. I understand it can be hard to do all this research by yourself if you’re not someone who researches a lot. As an almost graduated journalist, curiosity is my second nature and I’m more than willing to share with you where I get my nutrients as a vegan.

noodle-lunch-bowl

Lately I’ve been obsessed with making noodle bowls for lunch. I had some soy sauce leftover after eating sushi and I thought of meals that would be good with that. I thought a noodle bowl would be awesome. And I was right. Just throwing together cooked noodles, grilled veggies and the soy sauce is amazing. It’s the easiest thing to make. For this recipe I changed it up and I added some tofu as well. Today I’ll be sharing the recipe on my noodle lunch bowl with tofu. Yes, I ate this all by myself.
